This recipe is so easy, your taste buds will thank both of us. I have a great beef enchilada casserole recipe and I will share that with you next time. This recipe is Pastaaaaa! It’s so great, so tasty. You will enjoy it for sure. Enchiladas can be challenging. You have to roll each one. You have to make sure that you don’t put too much filling in them. There is a lot to make sure of when you are making the traditional enchiladas.
So, Don’t ever be afraid to switch things up a little. I love beef enchiladas and I absolutely love pasta. Why not put them together right? So, I did. The best part is that it’s the best of both worlds. So not only is this an easy beef enchilada recipe, but, it is a quick and easy pasta recipe. I hope you love it. Let’s get started.
Here’s what you need
2 lbs of ground beef
16oz of rotelle pasta
1 cup chopped onion
2 tsp of minced garlic
1 cup of green onion
8oz Mexican cheese blend
1/2 cup of black olives, sliced
1 large can of red enchilada sauce
Seasoning salt, pepper, Garlic powder.
Time to cook
Put your pasta on first. Boil it as you normally would or by the directions on the box. While the pasta is boiling, start browning your ground beef. While your meat is cooking be sure to season the meat well. I like to cook my onions at the same time as the beef. You can cook the onions a little before putting in the ground beef, if you prefer.
Drain your meat, once it is all cooked.
Once it is drained well, place the meat back into the pan and add your sauce. Cook these together on low. We just want the meat to soak up the sauce. While the meat and sauce are blending together add your black olives to the mixture. Add some salt to taste. Let this cook for about 8 to 10 minutes on low.
Your noodles are about ready. You can take one out and check the texture. If you like it then now you will drain the noodles.
For my Pasta, I usually use a large pot. So at this point once I have drained the pasta, I wash the pot and use this same pot to mix everything together.
There is probably an easier way to do this but, I like to make sure all of my pasta is touched by my sauce and meat.
So, at this point, you will put half the pasta in the pot and half of the meat mixture into the pot. Mix this very well and then had half the cheese. Stir in the cheese.
Do all of that again with the remaining meat and pasta.
When it is all mixed well top with the green onions
An Extra Freebie
OK, so I made this last night and was so upset that for our leftovers I am unable to do this step. But, I wanted to make sure you knew about it before you make this meal so that you can spruce up your leftovers.
For the leftover pasta, I like to add in sliced pieces of Chicken sausage. I know what you are thinking. “Who puts chicken sausage in enchiladas. I know, But wait until you try it.
It just gives it a new taste. Haven’t you ever noticed most food is better the next day. Well this just adds to that next day yumminess.
So, while you’re out getting the ingredients for this recipe make sure to pick up some chicken sausage. Costco has a good one or you can pick up your favorite kind near where the other link sausages are in your local grocery store.
Slice those up, maybe add a little more cheese. And you are off to take your taste buds to a new level.
Side dish idea
Now even though, I didn’t have the chicken sausage to add to my dish tonight. What I do think I am going to do is to now make it a side dish to chicken. I will probably fry some chicken. You can use baked too. My husband just happens to prefer his chicken fried. So, that is what I will be doing.
I am going to pair it with Chicken and then Corn on the cob. I think that will be great. Still getting the best of both worlds but adding another element to it. Because who doesn’t love the taste of fried chicken? I think it will be great.
This is what I mean. Be creative. My family eats left overs but they aren’t always happy about it. But if you just change it up a bit then you can enjoy leftovers easier than ever.
