Oh Side dishes! Don’t you hate it when you have a taste for something that would be your main dish, but you just can’t figure out what you want on the side? The worst is when you find a great recipe for something like meatloaf or chicken and you wonder what you can eat with it? I wish more people would put out their favorite recipes with what they ate on the side. It would be great, and I am going to do my best to make sure that my recipes are accompanied with an Easy side dish recipe.
I’ll be totally honest (since we’re all learning here) my problem is with taste. For instance, One night I made Fried chicken, cilantro lime rice, and (wait for it) my brown sugar carrots. Yep. That just didn’t go together. I just happened to have a taste for all through, so I threw them together.
Your side dishes should definitely fit together. Below, I have a few ideas for you. I hope you enjoy them. They are so, so tasty.
My Favorite Potato Side Dish Idea
I learned this recipe from my in-laws. It’s the best. It’s super kid friendly and hearty too. It’s a super easy cheesy potato recipe. Here’s what you’ll need:
3 russet potatoes
8oz of Velveeta cheese, cubed or sliced
1 stick of butter, cut into slices
1 cup of shredded cheddar cheese
salt and pepper to taste
preheat oven to 375 degrees.
Make sure to wash your potatoes and peel them. After the potatoes are peeled slice them. They shouldn’t be too thin. You want them to be a little thick. Boil the potatoes until you are able to easily stick a fork in them. Now this is not to be mashed potatoes. This is more like scalloped so you still want the potatoes to be together. So make sure to not over boil the potatoes.
When the potatoes are to a good firm/soft consistency pour off all the water.
Put the potatoes in a 13×9 baking dish and slice the butter over the potatoes. Just scatter the butter all over.
You will do the same with the Velveeta cheese. You want the cheese to be all over the pan. You can either slice it or cube it.
Add your salt and pepper, cover with foil, and place in preheated oven for 15 to 20 minutes.
About halfway through take the potatoes out and mix the cheese in a little better. When you have mixed the Velveeta cheese throughout, pour the Shredded cheddar on top, cover, and place back in the oven for the remaining time.
My Favorite and Easy Broccoli Recipe
I love this recipe. I actually just made this last night. I am just getting used to sharing my recipes so of course I forgot to take a picture and my kids and hubs loved it so much there isn’t any left. But it will be made again so, I will be sure to share.
You will need:
3 cups of raw broccoli florets, enough to cover a cookie sheet.
You can use either 3 tablespoons of olive oil or 1 1/2 sticks of butter
1 ranch dip packet
1 cup of balsamic vinegar
1 cup of Parmesan cheese
Everything is going to go onto a cookie sheet. When I say this is easy, I mean super easy.
Pour the broccoli onto the cookie sheet and spread out. If you use olive oil just pour over the broccoli and then mix around the cookie sheet to make sure all the broccoli has olive oil on it.
Pour half a cup of Balsamic vinegar over the broccoli.
Sprinkle the garlic powder all over the broccoli.
Place the cookie sheet into the oven for about 12 minutes. Check the firmness of the broccoli. It should still be firm. At this point, sprinkle with more oil or lace more butter, so that your broccoli doesn’t dry out.
Place back into the oven. After about 10 minutes I would check every 5 minutes or so to make sure a fork goes through easily.
Take the broccoli out and pour over the Parmesan, place back in the oven just to melt the cheese.
This is best served hot.
Baked Brussels sprout Recipe
Try this super easy brussels sprout dish. There are only 2 ingredients:
Brussels sprouts and honey
This is even easier than the two recipes above. For this recipe, I cheat a little bit. I get the steam-able bag of Brussels sprouts. I just follow the directions on the bag.
When that is done, take the Brussels sprouts out and put them into a serving dish and squeeze your honey over the sprouts. Cover them. There isn’t really a measurement for that. You just want the honey to cover the sprouts.
Mix a little in the bowl and you are finished.
This is best served hot, as well.

They are great for everyday dinner side dishes. You can of course use them during holidays as well. But when you are looking for something to throw together one night these don’t call for a lot of ingredients and they are super tasty.
