I am so excited to add to my site some vegetarian dishes. See, I grew up with my Father and StepMom. Mom number 2. We throughout our lives their vegetarian journey has changed in many ways. They are vegetarian based off religion. I don’t think I have ever seen them eat meat.
So, they are more on the vegan side. There are even some cheeses they cannot eat. They don’t eat anything that talks, walks, or swims. AND they don’t eat anything that has certain ingredients like gelatin. So, I say all that to say I pretty much grew up eating a lot of vegetarian foods. I would only eat meat when I was away or with my Mom.
My Biological Mother is Jamaican. I loved going to visit them because the food was so delicious. I try to make some of those recipes that were my favorite. I will surely have some of those recipes coming soon. But today I am super excited to add some vegetarian recipes to my collection.
Today will be more about side dishes. I am starting with this for you because even if you are NOT vegan or vegetarian you can make these. They are going to be some recipes that you can add to any meal. They are also great vegetarian Thanksgiving side dishes. You can add these to your menu for that tasty Holiday.
First Up!! Easy Sauteed Brussels Sprouts.
This is one of my Fathers “smokin!” dishes. That’s what he would call it. It’s so good and so good for you. I have another brussels sprout recipe on here but this one is great as well. For Vegetarians, I don’t think side dishes are very hard to find. I mean, I am not a vegetarian, so I don’t know. Maybe it is.
I think the issue would be more about sprucing things up. So that, its not just regular vegetables. I would think that you have to make vegetables tasty, either way. Especially if you are transitioning, from being a meat eater to being a vegan. Depending on why you are doing it, it may not be so easy.
So this will be exciting and tasty.
Here’s What you will need
You can buy a bag or buy separated Brussels sprout.
Separately, this would be based on getting about 8-10 Brussels sprouts
1/2 onion, chopped
2 tbs of olive oil
1 can or jar of stewed tomatoes
1 tbs of smoked hickory liquid smoke
salt and pepper, to taste
Cut the bottoms off of they sprout. Then cut in half.
Steam the Brussels sprouts just until they are a little soft
While they are steaming put your olive oil into a pan and saute the onions
Add the sprouts to the onions and allow them to cook until they are a little singed.
Pour in the Stewed tomatoes
Let this simmer until the brussels are tender, this is when you will add the liquid smoke, salt and pepper to taste.
Next up, One of my Childhood Faves
I call this recipe Broccoli Spaghetti. I can assure you that is not the proper name. But that is what I always called it. You will see why. I remember asking my Mom if she was making or could make her broccoli spaghetti. Oh Man!! It was definitely one of my favorite dishes. I was never a broccoli lover either.
This is why I say you just have to know how to make something taste good. You just have to make sure that you try new things. This dish is soooo simple. It’s such an easy broccoli side dish. If you are a garlic lover, you will love this. If you are a spaghetti lover, you will love this. If you are a broccoli lover, you will love this.
Lets get started.
For this recipe, you will need
1 box of spaghetti noodles.
2 cups of broccoli, steamed
3 tbs of minced garlic
3 tbs of olive oil
Cook your spaghetti noodles as normal
Steam the broccoli
Put the oil in a pan and saute the garlic a bit
You can toss the broccoli in the oil and garlic
Drain the spaghetti
Now is when you will mix it all together.
This particular dish can be either a meal or a side dish.
See how easy that was? So easy and so good.
Who would have thought broccoli and spaghetti could go together?
Easy Peasy, right?
So, easy. I will leave it to these two for now. I am sure to have more for you.
Side dishes are important. You want to pair them right. Side dishes are the hardest part of a meal for me. I don’t want to add sweet with savory. I don’t want to add savory with spicy. Well, I guess that last one isn’t so bad.
For me, I think to myself “Ooh tacos sound good!” Then my husband is like,”OK, but then we will need Spanish rice and refried beans on the side!” Now, back in my single days it was just a plate of tacos. I am married to a man that wants side dishes with tacos? Who does that?
My kids are going to grow up thinking you have to have side dishes with tacos. Side dishes with TACOS? Come onnnnn! lol
Okay enough of my rant. Only my husband. Anyone else’s husband like that? Tell me your stories. I can’t be the only one right? I hope not. It’s okay now. However, I like the rice and beans to them. I just eat the tacos.
I have learned that the way you eat when you are single is 100% different when you have a family. I can’t have spaghetti with just meat and sauce anymore. It has to have olives, mushrooms, and sausage. Oh and the meat has to be ground beef and ground Italian sausage.
it’s like I got married and overnight became a gourmet chef, at the same time.
I wouldn’t change it for the world though, because now I am excited to try new things, I challenge myself often. You should too. You never know how good of a cook you are until you try.
